Normally, Friday is my night off from cooking. It’s the end of the week, I’ve already cooked six days in a row, and I want to relax. Tonight was an exception…I went against routine and wanted something delicious. I already had a lunch in the city with my daughter eating an amazing pizza and salad (see pics below) at California Pizza Kitchen last week.
It was so good I decided to do a knock-off ‘easy’ dinner and try to replicate what I had. I found frozen California Pizza Kitchen pizzas at the store and decided I would grill them on the BBQ. One pepperoni and one Greek style.
I preheated the grill and turned it down to the lowest setting…about 360*. I left it covered for about 15 minutes until the crust was golden brown.
Next I made a salad using a complete salad combo from Costco with all kinds of healthy greens and fixings added including the dressing.
Put a little of the tossed and dressed greens in the center of a pizza slice and folded it like a taco – then bit into yummy goodness! Of course it wasn’t as good as the first time (at the restaurant because we were starving) but it was good and healthy and I will make it again!

We have not hosted a family Easter Day in at least a decade, we’ve always celebrated out of town at grandmas’. It was so delightful to be able to cook and share our feast with three of our children and friends. Here was our menu:
