My Mad Card Making Skills

As usual I can’t help myself when it comes to making cards for special events and holidays.  Here are examples of the past two years; 2017 was more vintage and sweet and this year more graphic and gold.

 

Cauliflower Pizza Crust Recipe

(Make a heart shaped crust for Valentine’s Day) 

Ingredients

1 small to medium sized head of cauliflower – should yield 2 to 3 cups once processed

¼ cup shredded Parmesan cheese

¼ cup mozzarella cheese

1 egg

¼ teaspoon salt

½ teaspoon garlic powder

1 cup marinara sauce

1-2 cups mozzarella cheese

Instructions

Preheat oven to 450 degrees F.

Remove the stems from the cauliflower and cut into chunks, Place the cauliflower into a food processor and pulse it until it resembles the texture of rice. If you don’t have a food processor, you can use a cheese grater or chop it very finely. But quickest way is to just buy the pre-chopped (riced) packaged cauliflower at your local grocery store.

Microwave the chopped cauliflower uncovered in a microwave safe bowl for approximately 4-5 minutes on high. Remove it from the microwave and allow it to cool for at least 4-5 minutes (trust me don’t rush this step!). After the cauliflower is slightly cooled, place it in a kitchen towel and squeeze all the liquid out of it. Be sure to squeeze as much liquid as humanly possible.

Combine the cooked cauliflower, egg, garlic, cheese, and seasonings. Stir until a dough texture forms. Spread the cauliflower mixture out onto lightly greased parchment paper or a pizza pan in the shape of a pizza crust.

Bake the crust for approximately 10-15 minutes (depending on your oven), or until the crust is golden and crispy. I cooked mine for approximately 15 minutes. After the crust is golden remove it from the oven and add your toppings, you can use marinara sauce and cheese for a simple margarita pizza.

Place the pizza back in the oven but this time turn on the broiler, bake for about 2-5 minutes until the cheese melts. be sure to keep an eye on it because the broiler can burn the cheese quickly.

Slice and serve warm , enjoy!

Did You Miss Me?

Update

It’s been a while since writing to you, but this is my attempt to summarize since posting last – more than a month ago.  Sometimes in this life all of your options need to be set aside to gain perspective and restart.

I had an absolutely fabulous time in Vietnam.  It was so different than I imagined and really fell in love with the country, its people, and aspects of what we experienced.  If I should have the opportunity to return, I hope it will be soon.  If you follow me on Facebook, Instagram, or Twitter, I was able to post most pictures and stories of what we did there. Here is a brief gallery of some of the pictures that I took:

When I did finally get back earlier this month, I had to have a re-evaluation of my life and goals.  The basics haven’t changed, just some of my heart issues and seeking the will of God in my current circumstances.  I am still living away from my real home and caring for my mother-in-law and her home out of town.  I miss my kids and husband, but I see them frequently, either here or there.  I have peace and I am happy everyday.

There is new direction coming and new purposes for this season, and I can’t wait to implement them. More to come on those.  Here is a glimpse of what I’m working on and not nearly finished yet.
